
Perfect Cornbread
Here is the most perfect cornbread to go with your black eyed peas today!!
Ingredients
- 1 cup all-purpose flour
- ¼ cup sugar
- 4 tsp baking powder
- ¾ tsp salt
- 1 cup yellow cornmeal
- 2 eggs
- 1 cup milk
Instructions
- Preheat oven to 425 – If using a cast iron pan place in the oven as it preheats with 2 tbsp. of oil in the pan
- Sift flour, sugar, baking powder and salt into a medium bowl
- Stir in corn meal
- Add in eggs, milk and shortening, stirring until smooth – I used a whisk but you could use a wooden spoon or spatula
- Pour into a greased pan – you can use a cast iron skillet or a 9×9 pan
- Bake for 20-25 minutes, or until top is golden
- Let stand for a few minutes before serving
