Here is the most perfect cornbread to go with your black eyed peas today!!

  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 4 tsp baking powder
  • ¾ tsp salt
  • 1 cup yellow cornmeal
  • 2 eggs
  • 1 cup milk


  • Preheat oven to 425 – If using a cast iron pan place in the oven as it preheats with 2 tbsp. of oil in the pan
  • Sift flour, sugar, baking powder and salt into a medium bowl
  • Stir in corn meal
  • Add in eggs, milk and shortening, stirring until smooth – I used a whisk but you could use a wooden spoon or spatula
  • Pour into a greased pan – you can use a cast iron skillet or a 9×9 pan
  • Bake for 20-25 minutes, or until top is golden
  • Let stand for a few minutes before serving
