Preheat oven to 425 - If using a cast iron pan place in the oven as it preheats with 2 tbsp. of oil in the pan
Sift flour, sugar, baking powder and salt into a medium bowl
Stir in corn meal
Add in eggs, milk and shortening, stirring until smooth - I used a whisk but you could use a wooden spoon or spatula
Pour into a greased pan - you can use a cast iron skillet or a 9x9 pan
Bake for 20-25 minutes, or until top is golden
Let stand for a few minutes before serving
